Homemade Muesli Bars

I made some beautiful homemade muesli bars but the photo I took did not do them justice, so I’ve included a generic muesli bar photo instead. I kind of burnt them (a little bit) and I was too impatient to wait for them to cool, and cut them too soon… but they’re yummy!!

Here’s what you’ll need;
2 cups rolled oats
1/2 cup shredded coconut
110g diced apricots, chopped
1/2 cup orange juice
1/3 cup honey
2 cups breakfast cereal flakes, crushed (like Special K or Cornflakes)
1 cup sultanas
2 egg whites, lightly whisked

Step 1: Preheat over to 220 degrees celsius. Line a 28 x 18cm lamington tray with baking paper.

Step2: Combine oats, coconut and almonds in an ovenproof dish. Bake in oven stirring occasionally for 10 minutes or until lightly toasted. Transfer to a large mixing bowl. Reduce oven to temperature to 180 degrees celsius.

Step 3: Meanwhile, combine apricots, juice and honey in a small saucepan and simmer for 5 minutes or until apricots are soft and liquid forms a syrup.

Step 4: Add cereal to bowl with sultanas and stir to combine. Add apricot mixture and egg whites and stir until all ingredients are moistened. Transfer mixture to prepared tray and press down firmly until top is smooth. Bake for 30 minutes until firm and golden. Cool completely then cut into bars.

Nutritional value: Per-serve; 6.5 protein, 9g fat (2.5g saturated fat), 39g carbohydrate, 4g dietary fibre, 1075 kJ (255 cals).
